White truffle can’t be farmed or stored for more then 10 days and that’s why when the season is over you just need to wait patiently till the next one.
It can be dug from late September but usually the season is from October to end late December or early January with picks is in November when you find the bigger and more tasty ones.
This year unfortunately the weather it was bad and unpredictable all around Italy and that’s why white truffles are hard to find on the market and very expensive too.
As the pick is getting close, truffle lovers like us hope for the season to improve and for the chance to use this precious ingredient in one of our dishes.
