Its name is derived from the Monaldeschi della Cervara noble family, who owned Castello della Sala in the 14th century. This wine is crafted from a blend of Chardonnay grapes and a small quantity of Grechetto, resulting in a wine that can age gracefully while showcasing the elegance and complexity of the estate. The first vintage of Cervaro was produced in 1985.
